This savory pie is a delicious way to use up your Thanksgiving leftovers, combining turkey, stuffing, and vegetables in a comforting dish that everyone will love.

Ingredients

  • 2 cups cooked turkey (shredded or chopped)

  • 2 cups leftover stuffing

  • 1 cup leftover gravy (or more, to taste)

  • 1 cup mixed vegetables (like peas, carrots, and corn)

  • 1 teaspoon dried thyme (or your favorite herbs)

  • Salt and pepper (to taste)

  • 1 pie crust (store-bought or homemade)

  • 1 egg (beaten, for egg wash)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C).

  2. Prepare Filling: In a large bowl, combine the shredded turkey, leftover stuffing, gravy, mixed vegetables, thyme, salt, and pepper. Mix well until everything is evenly coated. If the mixture seems dry, add a bit more gravy to achieve your desired consistency.

  3. Prepare Pie Crust: Roll out your pie crust and fit it into a 9-inch pie dish. Trim any excess dough hanging over the edges.

  4. Add Filling: Spoon the turkey and stuffing mixture into the prepared pie crust, spreading it evenly.

  5. Top with Crust: If you have a second pie crust, place it over the filling and crimp the edges to seal. Cut a few slits in the top crust to allow steam to escape. If you’re using just one crust, you can also leave it open-faced.

  6. Egg Wash: Brush the top crust with the beaten egg for a golden finish.

  7. Bake: Bake in the preheated oven for about 30-40 minutes, or until the crust is golden brown and the filling is heated through.

  8. Cool and Serve: Allow the pie to cool for a few minutes before slicing. Serve warm, and enjoy your delicious Thanksgiving leftover creation!
